Best Cucumber Sandwich Recipe
Description
This sandwich combines smooth feta blended with walnuts and olive oil, creating a rich, textured spread enhanced by fresh chopped dill. Thin cucumber slices, which can be salted ahead to remove excess moisture, provide a cool crunch that contrasts with the creamy spread and soft bread.
The assembly involves spreading the feta mixture generously on bread slices, layering cucumbers carefully to overlap slightly, then topping with another bread slice pressed gently so the sandwich holds together. Removing crusts and cutting into triangles or squares gives a tidy presentation.
Salting cucumbers in advance prevents soggy sandwiches if made ahead, while adding ingredients like lemon zest or microgreens can introduce subtle brightness and extra flavors without overpowering the fresh character of the sandwich.
Ingredients
- 4 ounces feta cheese
- 1 tablespoon olive oil
- 2 tablespoons walnuts
- ⅓ cup dill chopped
- 1 English cucumber thinly sliced
- 16 lices sandwich bread
Instructions
- Place the feta, walnuts, and olive oil in the bowl of a small food processor. Blend until the cheese mixture is creamy.
- Transfer the cheese mixture to a bowl and add the chopped dill. Mix using a spoon.
- Thinly slice the cucumbers using a chef's knife or mandoline.
- Spread a generous layer of the feta mixture onto each slice of the sandwich bread. Arrange the cucumbers on 8 bread slices and have them overlap slightly.
- Top the cucumbers with the remaining 8 slices of bread and press gently to have the cucumbers stick to the cheese. You should have 8 cucumber sandwiches.
- Remove the crusts of the sandwiches. Cut the sandwiches into triangles or squares and arrange on a plate.
Notes
- Salt cucumber slices and drain before assembling if making sandwiches ahead to keep them crisp and prevent sogginess.
- Apply the feta spread liberally on bread slices to create a barrier that keeps cucumbers from making the bread soggy.
- Consider adding lemon zest, black pepper, or microgreens for extra flavor and freshness.
