Best Deviled Eggs Recipe

Best Deviled Eggs Recipe features hard-boiled eggs halved and filled with a smooth, creamy yolk mixture flavored with Dijon mustard, dill, shallots, smoked paprika, capers, and seasoning. The yolk filling is pureed for a consistent texture and piped back into the egg white halves. Sprinkled with extra dill and capers, these eggs deliver a mild smoky and herbaceous flavor with a balanced richness.

Description

This recipe starts by boiling a dozen large eggs until fully hard-boiled and cooling them thoroughly under cold water to facilitate peeling. Each egg is sliced lengthwise, and the yolks are removed and combined in a food processor with reduced-fat mayonnaise, Dijon mustard, fresh dill, diced shallots, smoked paprika, salt, and black pepper until extremely smooth. The yolk mixture is then piped back into the egg whites to create evenly filled deviled eggs.

The addition of smoked paprika provides subtle heat and smokiness, while dill and capers add fresh, herbal, and briny notes, enhancing the overall flavor profile. The eggs are chilled before serving to firm the filling and meld the flavors.

These deviled eggs make a classic appetizer or party dish, suitable for serving chilled and garnished with additional dill and capers to highlight their flavors.

Ingredients

Servings
  • 12 large egg
  • 1/2 cup mayonnaise reduced fat
  • 1 tablespoon Dijon mustard
  • 6 prigs dill + extra for garnish, fresh
  • 2 teaspoons shallot diced
  • 1/2 teaspoon smoked paprika hot
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon capers

Instructions

  1. Place 1 dozen eggs in a large pot. Fill the pot with cold water until it covers the eggs by about an inch. Bring the water to a boil; then reduce to a low simmer for 15 minutes.
  2. Remove the pot from the stove and place it in the sink. Run cold water into the pot for several minutes until the pot is full of cold water. (The longer the eggs cool the better.) Remove the eggs. Roll each egg to crack the shell and gently peel.
  3. With a sharp knife, cut each egg in half length-wise. Remove the yolks and place them in the food processor. Add the mayo, mustard, dill, shallots, paprika, salt, and pepper to the egg yolks. Puree until extremely smooth.
  4. Using a pastry bag and tip, or a zip-bag with one corner snipped off, pipe the yolk mixture into the hole of each egg. Sprinkle a few capers and extra chopped dill on each egg. Cover and refrigerate until ready to eat.
