Best, Easy BBQ Pulled Chicken Sliders Recipe
Description
The Best, Easy BBQ Pulled Chicken Sliders Recipe starts by sautéing thinly sliced red onions in butter or oil until softened and lightly browned. Shredded chicken, either freshly cooked or leftover, is mixed with barbecue sauce to create a moist and flavorful filling. Hawaiian sweet rolls are sliced, with the bottoms cut slightly thicker to hold the filling without becoming soggy. The chicken mixture is spread over the bottom buns, followed by evenly placed slices of white cheddar cheese and the cooked onions. The top buns are placed on, then brushed liberally with a melted butter mixture infused with garlic powder and salt. Sesame seeds may be sprinkled on top for garnish.
The sliders are baked covered briefly to meld flavors and melt the cheese, then uncovered to brown and crisp the tops. This method ensures a satisfying balance of soft bread, tender chicken, melted cheese, and slightly caramelized onions with a buttery, garlicky finish. Serving these warm makes them a hearty and approachable option for casual meals or gatherings.
Using slightly thicker bottoms and careful portioning prevents messiness and sogginess. Leftover sliders can be refrigerated or frozen, with reheating instructions to maintain texture and flavor. Adaptations include gluten-free rolls or low-carb substitutions for dietary preferences.
Ingredients
- 1 pound chicken off the bone and shredded, or use leftover chicken or turkey, rotisserie style
- 1 cup BBQ sauce store bought or homemade
- 12 rolls hawaiian rolls I used King's Hawaiian sweet rolls, cut lengthwise to separate the bottoms from the top, slicing the bottoms slightly thicker than the tops.

- ½-1 teaspoon garlic powder
- Pinch kosher salt

- Place the bottom half of the rolls in the baking dish and spoon on the chicken mixture and spread gently over the buns.
- Place the cheese slices evenly over the top of the chicken.

- For make-ahead prep, assemble sliders without the butter topping, wrap tightly, and refrigerate or freeze up to 3 months.
- When baking from frozen, thaw overnight and reheat with butter sauce for best results.
