Description

Best Ever Corn Chowder starts with sautéed onion and celery in melted butter, followed by adding water, potatoes, frozen corn, and seasonings to simmer until potatoes are tender. A flour slurry mixed into half and half is stirred in to thicken the soup, creating a creamy base without heavy cream. Some potato pieces are gently mashed against the pot to help further thicken the broth.

The chowder has a comforting texture with chunks of soft potatoes and corn kernels combined in a creamy broth. Black pepper and optional sugar balance flavors while the bacon added at the end contributes a smoky crunch. Cooling the chowder before mixing in bacon preserves its crispness.

This chowder can be served immediately or cooled and frozen for later use. When reheating from frozen, warming gently without boiling keeps the texture intact. Extra bacon can be sprinkled on top for garnish and added flavor.

  • 1/4 cup butter melted
  • 1/2 cup onion diced
  • 1 cup celery diced
  • 2 1/2 cups water hot
  • 2 cups potato peeled and cubed
  • 3 cups corn frozen
  • 1 tablespoon sugar optional, granulated white
  • 2 teaspoons salt
  • 1 teaspoons black pepper cracked
  • 3 tablespoons all-purpose flour
  • 2 cups half and half
  • 6 lices Bacon cooked and crumbled

Instructions

  1. Cook onions and celery in butter until soft. Add water, potatoes, corn, sugar, salt and pepper.
  2. Cover and simmer until potatoes are soft, about 30 minutes.
  3. In a small bowl, mix flour into 1 cup of the half and half. Stir into the soup, then add remaining half and half. 
  4. Heat until it gets nice and thick, smushing some of the potatoes against the side of the pot, and stirring often.
  5. Cool and stir through the bacon. Either serve now, with extra bacon, or cool, label, seal and freeze.

From frozen

  1. Thaw it and heat until hot, but don't boil. Top with bacon if desired.
