  • 2 pounds carrot peeled and sliced diagonally
  • 1 tablespoon olive oil
  • ¼ cup butter unsalted, melted
  • ¼ cup brown sugar
  • 2 teaspoons garlic minced
  • ¼ teaspoon black pepper to taste
  • ½ teaspoon salt
  • parsley for garnish, fresh chopped

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray. Peel and slice 2 pounds carrots diagonally then place them in a large bowl.
  2. Add 1 tablespoon olive oil, ¼ cup unsalted melted butter, ¼ cup brown sugar , 2 teaspoons minced garlic, ¼ teaspoon pepper, and ½ teaspoon salt. Stir to combine and coat the carrots.  
  3. Spread the carrots in an even layer on the baking sheet. Bake for 10 minutes then stir the carrots on the pan. Bake for an additional 10 minutes until the carrots are tender and caramelized. Garnish with fresh chopped parsley if desired.
