Best Ever Hummus
Description
This hummus recipe starts with chickpeas and incorporates tahini paste made from toasted sesame seeds, creating a richly textured base. Olive oil and freshly squeezed lemon juice add moisture and brightness, while garlic slices and ground cumin contribute warm savory notes. Blending until smooth and adjusting thickness with reserved chickpea liquid creates a creamy, spreadable dip.
The hummus has a mild garlic flavor complemented by the bright acidity of lemon and the nutty undertone of tahini. Drizzling olive oil on top before serving and garnishing with parsley or sumac can enhance the presentation and add subtle extra flavor layers.
Hummus is versatile for serving as a dip with vegetables, spread in sandwiches, or as an accompaniment to Middle Eastern dishes. Its smooth, creamy texture and balanced seasoning make it a staple dip or spread.
Leftover hummus stores well in an airtight container in the refrigerator for up to one week. For longer storage, it can be frozen with a thin olive oil layer on top to retain moisture and thawed in the fridge before serving. Roasted chickpeas can be made separately for a crunchy topping or snack.
Ingredients
- 15 ounce chickpeas drained and rinse, reserve liquid from can
- ¼ cup olive oil extra virgin
- ½ teaspoon cumin ground
- 2 garlic cloves sliced
- ½ teaspoon salt
- ⅓ cup lemon juice freshly squeezed
- ½ cup tahini paste
Instructions
- Process in a food processor or blender: Add the chickpeas and the rest of the ingredients, excluding the liquid from the can of chickpeas, to a food processor or blender and pulse until smooth. Add the liquid from the can of chickpeas if the hummus is too thick up to ½ cup or until the desired consistency is achieved.
- Serve: Transfer hummus to a dish and drizzle some olive oil over it, then garnish with parsley or sumac for extra lemony flavor.
Notes
- Tahini paste is made from toasted sesame seeds and is essential for traditional hummus flavor.
- To make roasted chickpeas, season drained chickpeas with spices and roast at 400°F for about 30 minutes until crispy.
- Using a blender rather than a food processor can yield a smoother hummus texture.
- Store leftovers refrigerated for 4 to 7 days in an airtight container.
- For freezing, cover hummus with olive oil and freeze up to 4 months; thaw in refrigerator before serving.
