Ground cumin, oregano, lime juice, and salt season the salsa, enhancing complexity without overpowering the fresh ingredients. Pulsing the mixture in a food processor allows control over texture, from chunky to smooth.
The result is a vibrant salsa with layers of smoky, mild heat and herbaceous brightness from cilantro and lime. It pairs well with tortilla chips, tacos, grilled meats, baked potatoes, or as a topping for soups and omelets, making it a versatile accompaniment.
This salsa can be adjusted for heat by including or removing jalapeño seeds, and seasoning can be fine-tuned to taste after blending.
Ingredients
- 2 ounce fire-roasted canned tomatoes canned, in cans
- 1 ounce roasted red bell pepper well-drained, jarred
- 1 ounce green chile these are not spicy, just add great flavor, undrained, canned
- ½ red onion roughly chopped, medium
- ½-1 cup cilantro leaves and stems, packed, fresh
- 6 medium green onions roughly cut in two inch pieces
- 3 medium garlic peeled, number missing
- 1-2 medium jalapeno pepper seeded (if you like a spicier flavor, leave the seeds in
- 1 teaspoon salt
- 1 teaspoon cumin ground
- 1 teaspoon oregano dried
- 2 tablespoons lime juice fresh
Instructions
- Drain the tomatoes, reserving the juice.
- Combine all ingredients except reserved tomato juice in the bowl of a food processor. Pulse on and off until all ingredients are finely chopped and salsa is desired consistency. We like it a bit chunky, but if you like a smoother salsa, just keep pulsing. If you like a thinner salsa, add the reserved tomato juice and pulse one more time.
- Taste for seasoning and adjust as needed. Serve with chips, tacos or other Mexican entrees, as a baked potato or omelet topping, soup garnish, etc.
