BEST Hamburger Gravy Recipe
Description
This recipe starts by browning lean ground beef with chopped onion and minced garlic until fully cooked. Flour and butter are added to form a roux that thickens the gravy and mellows the flour's flavor. Dried herbs like thyme, sage, paprika, and onion powder season the mixture, along with Worcestershire sauce and beef bouillon for depth. Adding beef broth and heavy cream creates a creamy, savory sauce that simmers gently to develop flavors and a smooth consistency.
The gravy is well suited to spoon over mashed potatoes, pasta, rice, or biscuits, turning basic sides into a satisfying meal. Fresh parsley sprinkled on top adds color and a subtle herbal note.
Ingredients
- 1 1/2 pounds ground beef lean
- 1 yellow onion finely chopped, small
- 2 cloves garlic , minced
- 1/4 cup all-purpose flour (gluten free: skip this and stir in a cornstarch slurry at the end: dissolve 2-3 teaspoons cornstarch in 2 tablespoons water)
- 1 tablespoon butter
- 2 cups beef broth quality
- 1/2 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 2 teaspoons beef bouillon base e.g., Better Than Bouillon, or 2 cubes
- 2 teaspoons porcini mushrooms optional but recommended for the ultimate umami boost, ground, dried
- 1 teaspoon salt
- 1/2 teaspoon black pepper freshly ground
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme dried
- 1/4 teaspoon sage ground
- parsley chopped, fresh, for serving
Instructions
- Heat a skillet with about 1 tablespoon of oil over medium high heat. Add the ground beef, onion, and garlic and cook until there is no pink remaining. Stir in the flour and butter and cook for another 3 minutes (this will also cook off the “raw” flavor of the flour). Stir in the thyme, sage, onion powder, paprika, salt, pepper, ground porcini mushrooms (if using), bouillon base, and Worcestershire sauce. Add the beef broth and heavy cream and bring it to a simmer, stirring constantly to prevent lumps. Cover and let the sauce simmer for 10 minutes, stirring occasionally. Add salt and pepper to taste.Serve over mashed potatoes, pasta, rice or buttermilk biscuits, sprinkled with some parsley.
