Pork chops return to the skillet to be basted in this aromatic sauce, then finish cooking in the oven to ensure juiciness inside. A quick broil caramelizes the sauce further before serving.

  • 4 pork chops bone-in or bone-out
  • 2 tablespoons olive oil
  • 4 tablespoons butter unsalted
  • 6 cloves garlic minced
  • 1/3 cup chicken broth
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon rosemary chopped, fresh
  • 1/3 cup honey
  • 2 rosemary sprigs, fresh
  • salt to taste
  • black pepper to taste
  • green onion chopped

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place a large cast-iron skillet over medium-high heat until hot. Once hot, add the olive oil. Season pork chops with salt and pepper on both sides and add to the pan. Sear on both sides until golden-brown and cooked through, about 5 minutes per side.
  3. Transfer to a plate and cover tightly with foil.
  4. Reduce heat to medium and add butter to the same pan, stir to melt it. Once melted, add minced garlic and sauté it just until fragrant, for about 30 seconds.
  5. Add broth, vinegar, honey, and fresh rosemary. Season with salt and pepper to taste. Increase heat to medium-high, stir and cook the sauce until it reduces and thickens slightly about 5 minutes.
  6. Add pork chops back to the pan, baste with the sauce, add a few sprigs of fresh rosemary and transfer to the oven for about 7-10 minutes. Broil for 1-2 minutes before serving.
  7. Garnish with chopped green onions before serving.
