Best Maine Lobster Roll Recipe (Authentic)

The Best Maine Lobster Roll is a traditional sandwich featuring tender lobster meat mixed with mayonnaise and fresh herbs, served in toasted New England-style rolls buttered and browned to a golden crust. The lobster salad combines claw, knuckle, and arm meat with dill, parsley, salt, garlic powder, and pepper for a flavorful, simple filling that highlights the fresh seafood. Toasting the rolls adds a crisp contrast to the creamy lobster filling.

Description

This authentic Maine Lobster Roll recipe centers on fresh cooked lobster meat, primarily from claws, arms, and knuckles, combined with a light dressing of mayonnaise and finely chopped fresh dill and parsley. Seasoned with salt, garlic powder, and black pepper, the salad maintains a delicate balance, allowing the lobster's natural flavor to stand out. The lobster is gently mixed to keep the pieces intact and tender.

New England-style frankfurter rolls are generously buttered on both flat sides and toasted on a skillet or griddle until both sides achieve a golden-brown crust. This toasting adds texture and warmth, complementing the creamy lobster salad placed inside. The roll's soft interior contrasts with the crisp buttered exterior, making each bite satisfying.

The lobster roll can be served immediately after assembly. Traditionally, the lobster meat is steamed beforehand using salted water and a steaming basket, with cooking time based on lobster weight. After steaming, the lobster is cooled before shelling. This recipe provides a straightforward method for mixing the salad and toasting the bread to create a classic Maine lobster roll experience.

Steaming lobsters properly includes moving them during cooking to ensure even heat distribution. Additionally, cooling the meat before stuffing the rolls helps maintain flavor and texture. Using fresh herbs adds brightness, and the buttered toasting offers a rich finish.

Ingredients

Servings

For the Lobster Salad –

  • 2 pounds lobster meat claw, arm, and knuckle meat, cooked, from Maine
  • ¼ cup mayonnaise
  • 1 tablespoon dill fresh, chopped
  • 1 tablespoon parsley fresh chopped
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

For the Rolls –

  • 10 frankfurter rolls New England style
  • 5 tablespoons butter softened

Instructions

  1. For the Lobster Salad: Drain the cooked lobster meat in a colander for 5 minutes. Set out a large mixing bowl. Then chop the fresh herbs.
  2. If using claw meat, there is no need to chop it, but you can if you want smaller pieces. (If using lobster tails, chop it into bite-size pieces.) Move the lobster meat to the mixing bowl and add the mayonnaise, dill, parsley, salt, garlic powder, and pepper. Mix well.
  3. Cover and chill under ready to serve.
  4. For the Toasted Rolls: Spread both flat sides of the New England rolls with a generous amount of butter.
  5. Heat a large skillet (or griddle) to medium heat. Place the rolls flat-side-down in the skillet. Toast for 1-3 minutes until golden-brown. Then flip and toast the other side for 1-3 minutes. Remove and repeat as needed.
  6. Once all of the rolls are perfectly toasted, load them with lobster salad and serve!

Notes

  • Steam live lobsters by placing them in a pot with 2 inches of salted water and a steaming basket; steam for 10 minutes per pound, turning halfway through for even cooking.
  • Cool lobsters thoroughly before removing meat from shells to keep it tender and easier to handle.
  • Use claw, arm, and knuckle meat preferably, chopping tail meat into bite-sized pieces if used.
  • Toast rolls with butter on both flat sides until golden brown to add texture and flavor to the sandwich.
