Best Oven Baked BBQ Chicken
Description
The Best Oven Baked BBQ Chicken combines bone-in, skin-on chicken pieces with a rich sauce made by pureeing tomato sauce with molasses, Worcestershire sauce, hot sauce, brown sugar, spices such as Cajun seasoning, smoked paprika, garlic, and cornstarch to thicken. Half of the sauce is reserved for basting during cooking.
The chicken is roasted in a preheated oven at 400°F. After an initial 20 minutes, the pieces are flipped and basted with the reserved sauce, then returned to the oven for an additional 20 minutes or until reaching 165°F internally. A brief broil caramelizes the sauce into a sticky glaze on the skin, producing a flavorful crust.
This method allows for the depth of barbecue flavors without outdoor grilling and creates juicy, flavorful chicken with a balance of sweet, smoky, and spicy notes. The skin crisps while the sauce forms a shiny coating.
To prevent cross-contamination, handle the basting utensil carefully so the sauce used on raw chicken is cooked through during grilling and not reused raw. Using a separate spoon or cooking the sauce again ensures food safety.
Ingredients
- 1 cup tomato sauce
- 1/4 cup molasses
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce
- ¼ cup brown sugar
- 2 teaspoons cornstarch
- 1 teaspoon salt
- 2 1/2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 3 cloves garlic
- 3 pounds chicken pieces skin on, bone-in, various cuts
Instructions
- Preheat oven to 400 degrees. Lightly grease a baking sheet or 9x13 pan.
- In a blender combine tomato sauce, molasses, worcestershire sauce, hot sauce, brown sugar, cornstarch, salt, cajun seasoning, paprika, and garlic.
- Puree until smooth.
- Transfer half of the sauce into a separate bowl and reserve for later. Brush remaining sauce onto chicken pieces.
- Place chicken pieces into prepared pan. Bake at 400 degrees for 20 minutes, flip all pieces and baste with reserved sauce. Continue baking for another 20 minutes, or until chicken reaches an internal temperature of 165 degrees F.
- Switch oven to broiler setting and broil, 2 to 3 minutes until sauce caramelizes. Serve hot.
Notes
- To avoid cross-contamination, do not reuse sauce that has touched raw chicken unless it is cooked again.
- Use a separate utensil or reserve sauce before application for basting.
