Half of the sauce is reserved for basting during cooking.

After an initial 20 minutes, the pieces are flipped and basted with the reserved sauce, then returned to the oven for an additional 20 minutes or until reaching 165°F internally. A brief broil caramelizes the sauce into a sticky glaze on the skin, producing a flavorful crust.

  • 1 cup tomato sauce
  • 1/4 cup molasses
  • 2 tablespoons Worcestershire sauce

  • ¼ cup brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 2 1/2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 3 cloves garlic
  • 3 pounds chicken pieces skin on, bone-in, various cuts

Instructions

  1. Preheat oven to 400 degrees. Lightly grease a baking sheet or 9x13 pan.
  2. In a blender combine tomato sauce, molasses, worcestershire sauce, hot sauce, brown sugar, cornstarch, salt, cajun seasoning, paprika, and garlic.
  3. Puree until smooth.
  4. Transfer half of the sauce into a separate bowl and reserve for later. Brush remaining sauce onto chicken pieces.
  5. Place chicken pieces into prepared pan. Bake at 400 degrees for 20 minutes, flip all pieces and baste with reserved sauce. Continue baking for another 20 minutes, or until chicken reaches an internal temperature of 165 degrees F.
  6. Switch oven to broiler setting and broil, 2 to 3 minutes until sauce caramelizes. Serve hot.
