Ingredients

Servings

For the dressing:

  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon parsley fresh chopped
  • 1 tablespoon lemon juice fresh squeezed
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon paprika sweet
  • ¼ teaspoon black pepper

For the salad:

  • 2 ½ cups chicken small diced, approximately 3 chicken breasts or 6 boneless skinless chicken thighs, cooked
  • ½ cup celery small diced
  • ¾ cup red grape halved
  • 1 cup honeycrisp apple small diced
  • 2 tablespoons red onion finely diced
  • ¼ cup dried cranberries
  • ¼ cup pecans toasted finely chopped

Instructions

  1. In a large bowl, whisk together the mayonnaise, dijon, parsley, lemon juice, lemon zest, garlic powder, onion powder, salt, paprika, and pepper until combined.
  2. Add the diced chicken, celery, grapes, apples, red onion, cranberries, and pecans.
  3. Stir everything together until well combined and coated in the dressing. Serve immediately or cover with plastic wrap and chill until ready to serve.
  4. If you don’t want raw red onion in your salad, I suggest adding thinly sliced green onion in it’s place.
  5. I used a rotisserie chicken, which adds a lot of flavor as is, but use whatever cooked chicken you have on hand.

  • Super flavorful, crunchy, a little tart, and little sweet, and totally addictive. You keep going back for another bite. It is super fun to eat, because each bite is a little different with all the goodies in there. Yes, there is a lot of “stuff” in this salad, but it truly goes together amazingly well.
  • Keep leftovers in the fridge for up to 3 days, I do not suggest freezing
