  • 3 pounds potato peeled and cut into 1 inch cubes
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • salt to taste
  • black pepper to taste
  • 3 - 4 tablespoons butter
  • 1/4 cup half and half or more as needed
  • 1/4 cup sour cream

Instructions

  1. Grease the slow cooker insert with butter or cooking spray. 
  2. Place the potatoes in the slow cooker. Add the broth and milk and season lightly with salt and pepper. 
  3. Cook on high for 3 to 4 hours or on low for 6 to 7 hours.
  4. Using a masher, mash the potatoes until smooth. Add the butter and stir to combine. Add the Half and Half and sour cream and mix well. Add additional Hal and Half if needed until you reach your desire consistency.
  5. Season with salt and pepper to taste and serve. You can keep the mashed potatoes warm in the crock pot until ready to serve.

Notes

  • Potatoes cooked with milk create creamier mashed potatoes, but cooking with just chicken broth is an option for lighter texture.
  • Substitute heavy cream for half and half to increase richness.
