BEST Sweet Chili Sauce
Description
The BEST Sweet Chili Sauce is made by boiling together rice vinegar, water, cane sugar, rice wine, sambal oelek, garlic, ginger, tamari, and chili flakes until the sugar dissolves and flavors meld. The sauce is then thickened with a cornstarch slurry, resulting in a glossy, slightly thick sauce that cools to cling well on food surfaces. The balance of spicy chili heat and mild sweetness provides a versatile flavor profile.
This sauce’s texture is smooth with a moderate viscosity, typical for chili dipping sauces. The use of garlic and ginger adds aromatic pungency alongside the spicy sambal and flakes. Adjusting the amount of chili flakes allows control over heat intensity. It can include optional natural food coloring for appearance.
Sweet chili sauce serves well as a dipping sauce for spring rolls, grilled meats, seafood, or as a glaze component. Its popularity comes from the combination of heat, sweetness, and tangy vinegar. Preparing and storing in a jar refrigerated allows a week’s use for various dishes.
Ingredients
- 1/3 cup rice vinegar
- 1/3 cup water
- 1/3 cup cane sugar 2 tablespoons
- granular sweetener sugar free alternative, e.g. erythritol
- 1 tablespoon rice wine (can substitute dry sherry)
- 1 tablespoon sambal oelek (use more or less according to taste)
- dried red chili flakes these are very hot, start with less and add more if desired, 1-2 teaspoons
- 1 1/2 teaspoons garlic finely minced
- 1 teaspoon ginger finely minced
- 1 teaspoon tamari use tamari for gluten free, or soy sauce
- 2 teaspoons corn starch the sauce will thicken more once cooled, dissolved in 1 tablespoon water
- 1-2 drops red food coloring optional, natural
Instructions
- Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.
