- 400 g okra Bhindi, washed and dried
- 2 onions thinly sliced
- 2 tomatoes chopped
- 2 green chillies finely chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp chilli powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 2 tbsp vegetable oil
- salt to taste

Instructions
- Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add thinly sliced onions and sauté until they turn golden brown.
- Add chopped tomatoes and cook until they soften.
- Now, add chopped green chillies, turmeric powder, red chilli powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
- Add washed and dried okra (bhindi) to the pan. Stir well to coat the okra with the spice mixture.
- Cover the pan and cook for about 15-20 minutes, stirring occasionally, until the okra is tender.
- Once the okra is cooked, sprinkle garam masala and mix gently.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
