  • 32 oz apple cider
  • 18 oz ginger beer Fever Tree Refreshingly Light
  • 15 oz gin see notes, Rabbit Hole Bespoke
  • 5 oz lemon juice fresh
  • 4 oz simple syrup recipe in notes, thyme and cinnamon infused
  • 1 blood orange small, sliced
  • 4 cinnamon stick plus more for simple syrup
  • 4-6 prigs thyme plus more for simple syrup, fresh, for serving

Instructions

  1. Add all ingredients except ginger beer and thyme to a tall pitcher. Refrigerate overnight to help develop the best flavor.
  2. Just before serving, add ginger beer and stir well. Serve over ice, garnished with fresh thyme sprigs, cinnamon sticks, and apple and blood orange slices.

Notes

  • Prepare the thyme and cinnamon infused simple syrup by boiling equal parts sugar and water, then steeping cinnamon sticks and thyme sprigs off heat for 10-15 minutes until cooled.
  • Refrigerate the cocktail base overnight (before adding ginger beer) to develop deeper flavor.
  • Add ginger beer just prior to serving to keep its fizz and fresh ginger taste.
