Description

Biscoff Syrup combines equal parts granulated white sugar and light brown sugar dissolved in water, brought to a boil and then simmered to create a simple syrup base. After simmering for five minutes, biscoff spice—a blend associated with the flavors of the popular cookie—is added and cooked further to infuse the syrup with warm, aromatic notes. Vanilla extract is stirred in after removing from heat to enhance the flavor complexity.

The syrup is strained through a fine mesh to remove any spice particles, leaving a smooth liquid. It is then cooled and stored in a sanitized jar or bottle in the refrigerator, where it can be kept for up to four weeks. The syrup is versatile for drizzling on desserts, stirring into coffee, or using as a sweetener in other recipes.

Care should be taken to add spices only after simmering to avoid bitterness, and to let the syrup cool before handling containers to prevent burns. Multiple strainings can lighten the color by removing residual spice bits.

  • 1 cup sugar 200g, granulated white
  • ½ cup light brown sugar 100g
  • 2 teaspoons biscoff spice
  • 2 teaspoons vanilla extract

Instructions

  1. Stir the sugars and water together in a pot, bring to the boil, then reduce the heat to a simmer for 5 minutes.
  2. Add the biscoff spice and cook for a further 5 minutes.
  3. Remove from the heat, stir in the vanilla and allow to cool.
  4. Strain in a fine mesh strainer (or mesh bag) over a bowl.
  5. Pour into a jar or bottle and keep in the fridge for up to 4 weeks.

Notes

  • Add biscoff spice only after the sugar-water mixture has simmered for 5 minutes to prevent bitterness from overheating the spices.
  • Allow the syrup to cool sufficiently before pouring it into jars or bottles to avoid burns from hot liquid.
  • Store the syrup in a sanitized container in the refrigerator to prevent bacterial growth; it keeps for up to 4 weeks.
  • For a lighter-colored syrup, strain the syrup twice to remove excess spice particles.
