Biscuits and Gravy

Biscuits and Gravy combines golden flaky biscuits with a rich sausage gravy made from cooked ground sausage, flour, and milk. The gravy is seasoned simply with salt, black pepper, and optional cayenne or red pepper flakes for mild heat. The sausage provides savory depth, while the flour and milk create a creamy sauce that’s poured over warm biscuits for a hearty, comforting breakfast.

Description

This classic recipe starts by cooking sausage until browned, then using the drippings to create a roux with flour. Adding milk gradually while stirring produces a smooth gravy that thickens to coat the sausage evenly. Seasonings like salt and pepper provide base flavor, with cayenne or red pepper flakes optionally added for gentle spicing.

The gravy’s creamy consistency balances the biscuit’s flaky texture. Biscuits, either homemade or store-bought, are kept warm while preparing the gravy and served topped with the savory sauce.

Using whole milk enhances the gravy’s richness, and reserving the sausage fat increases flavor depth. The dish offers a filling breakfast or brunch option with familiar southern flavors.

Choose biscuit varieties based on texture preference; layering and flakiness in biscuits add character to the contrasting gravy. Pre-made biscuit dough simplifies preparation without sacrificing the pairing.

Ingredients

Servings
  • 6 Biscuits homemade or pre-made (Buttermilk Biscuit Recipe)
  • 1 pound sausage uncooked
  • 1/2 cup flour I like to use Wondra Flour
  • 3 to 4 cups milk
  • salt
  • black pepper
  • cayenne pepper powder optional
  • red pepper flakes optional

Instructions

  1. Cook sausage in large skillet over medium to medium-high heat until browned and no longer pink. Remove from pan and pat off excess grease with a paper towel.
  2. Return the sausage to the pan and add flour, stir to coat the sausage in the flour.
  3. Gradually add milk to the sausage and flour mixture while cooking on medium heat. Cook and add milk until sauce mixture is desired thickness.
  4. Add salt, pepper, cayenne, and or red pepper flakes to taste.

Notes

  • Use whole milk to achieve the richest, creamiest gravy texture.
  • Save the grease from cooking the sausage to enhance the gravy’s flavor.
  • Homemade or pre-made biscuits both work well; pre-made refrigerated biscuit dough saves time.
  • Warm biscuits in the oven while preparing the gravy to serve immediately.
