Black Bean and Corn Salad

Black Bean and Corn Salad combines fresh corn kernels, black beans, bell peppers, tomatoes, and red onion with a tangy lime dressing seasoned with chili powder and cumin. Chilled to meld the flavors, this colorful salad offers a crunchy and refreshing texture, suitable as a side dish or topping for grilled meats or chips.

Description

This Black Bean and Corn Salad brings together sweet corn, creamy black beans, fresh tomatoes, and crisp diced bell peppers with zesty red onion and chopped cilantro. The salad is dressed with olive oil, lime juice, chili powder, cumin, salt, and pepper to impart bright, smoky, and savory notes that complement the natural sweetness and earthiness of the vegetables.

The salad is tossed well and chilled for at least an hour to allow the flavors to develop and the dressing to permeate the ingredients. The optional cotija or feta cheese topping provides a salty contrast and creamy texture balance to the crunchy vegetables.

This salad can be served as a refreshing side to grilled chicken or fish, or enjoyed as a dip with tortilla chips. Adding a diced jalapeño can introduce mild heat for additional flavor complexity, adaptable to taste. It stores well refrigerated for up to four days with a recommended stir before serving again.
