Black Bean and Corn Salsa

Black Bean and Corn Salsa mixes diced Roma tomatoes, black beans, and corn with red onion, jalapeño, garlic, cilantro, and lime juice. The fresh ingredients combine to create a chunky, tangy salsa with a balance of mild heat, citrus brightness, and earthy beans. It can be served immediately or chilled to allow flavors to meld.

Description

This salsa brings together fresh vegetables and legumes for a flavorful topping or side. Roma tomatoes are cored and seeded, then diced and combined with rinsed canned black beans and corn kernels, which can be fresh, thawed, or canned. Finely chopped red onion adds sharpness, balanced by minced jalapeño for gentle heat, and minced garlic for depth. Fresh cilantro and lime juice contribute herbal and citrusy notes, while salt adjusts seasoning to taste.

The salsa is stirred and ideally allowed to rest for about 20 minutes at room temperature so the flavors can blend. It can be served as a dip with chips, a topping for grilled meats, or a refreshing salad accompaniment. The recipe also allows refrigeration for up to eight hours, helping to mellow and unify the flavors further, making it a convenient make-ahead option.
