  • 1 (14-oz) can black beans drained and rinsed
  • 2 large egg
  • 1/3 cup raw cacao powder
  • ¾ cup coconut sugar
  • 2 Tbsp avocado oil
  • 2 tsp balsamic vinegar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 2 tsp instant coffee optional
  • ½ cup coconut optional, unsweetened, shredded
  • 1 cup dark chocolate chips divided

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8" x 8" baking pan with parchment paper, then lightly oil the parchment paper.
  2. Stir ½ cup of the chocolate chips into the batter and pour into a lightly oiled or parchment lined baking dish.
  3. Bake for 18 to 20 minutes until brownies are set up and a toothpick tests clean.
  4. Allow brownies to cool 15 minutes before cutting into them.

Notes

  • Substitute regular white or brown sugar 1:1 for coconut sugar as preferred.
  • Avocado oil can be swapped with melted coconut oil, olive oil, or melted butter in equal amounts.
  • Balsamic vinegar may be replaced with apple cider vinegar, rice vinegar, or lemon juice to suit taste.
