Black Bean Burgers

Black Bean Burgers combine mashed black beans, finely chopped bell pepper, onion, and garlic with breadcrumbs, chipotle chiles, spices, and an egg binder to form flavorful vegetarian patties. These patties are cooked on a grill or skillet until browned with a texture that holds together despite the bean base. Served on buns with classic toppings, they're a hearty meatless burger option with smoky and mildly spicy notes.

Description

The recipe begins by finely pulsing vegetables in a food processor and removing excess moisture with paper towels to prevent soggy patties. The black beans are blotted dry and mashed, then mixed with the chopped vegetables, breadcrumbs, diced chipotles in adobo, spices, and a lightly beaten egg to bind the mixture. The mixture is shaped into four even patties.

Cooking on medium-high heat using a skillet or grill with oil, the patties are seared for 3 to 4 minutes per side until browned and heated through. Adding cheese slices during the last minute is optional. The texture remains tender with some firmness, but handling is delicate compared to meat patties, so pressing while cooking is discouraged.

The burgers are served on hamburger buns with preferred toppings such as lettuce, tomato, cheese, mustard, ketchup, or mayonnaise. This recipe is suitable for preparing patties ahead, storing refrigerated or frozen, and easy thawing before cooking.

Practical advice includes beating the egg before adding for even mixing, and gentle handling during cooking to maintain patty integrity. Freezing and storing patties in airtight containers lined with parchment paper facilitates meal prep and convenient cooking.

Ingredients

Servings
  • 1 cup bell pepper 128g, chopped
  • 1 cup onion 128g, chopped
  • 2 garlic chopped, cloves
  • 2 (15 ounce/425g) cans black beans drained and rinsed
  • ½ cup breadcrumbs 78g
  • 2 chipotle chiles in adobo sauce diced plus 2 tablespoons of sauce
  • 1 large egg
  • ¾ teaspoon chili powder
  • ¾ teaspoon cumin ground
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 2 teaspoons olive oil
  • 4 Hamburger Bun for serving

Toppings:

  • lettuce
  • cheese
  • tomato
  • ketchup
  • mustard
  • mayonnaise

Instructions

  1. In a food processor, pulse the bell pepper, onion, and garlic until finely chopped, 8 to 10 times. Pour the chopped vegetables out on a paper towel-lined baking sheet. Blot with paper towels to remove excess moisture.
  2. Blot the black beans separately on paper towels and place them in a large bowl. Mash the black beans until mostly broken up with a few whole beans remaining. Add the chopped vegetables, breadcrumbs, chipotle chiles, adobo sauce, egg, chili powder, cumin, salt, and black pepper. Stir until well combined. Shape the bean mixture into 4 even patties.
  3. Preheat a grill or large skillet over medium-high. Oil the grill grates or add oil to the skillet and tilt the skillet to evenly coat the bottom. Cook bean patties, in batches if needed, until browned and heated through, 3 to 4 minutes on each side. If topping burgers with cheese, place 1 slice of cheese on each patty during the last minute of cooking.
  4. Serve patties on hamburger buns with desired toppings.

Notes

  • Prepare the patties up to one day ahead and store in an airtight container lined with parchment paper in the refrigerator or freeze for up to one month.
  • Beat the egg before adding to the bean mixture to ensure even distribution.
  • Handle patties gently when cooking; avoid pressing down as they do not bind as firmly as meat patties.
  • Cook at medium to medium-high heat for best texture and to prevent breaking.
