Black Bean & Corn Salsa Salad

The Black Bean & Corn Salsa Salad is a colorful mix of diced tomatoes, cucumbers, corn, poblanos, jalapenos, red onion, cilantro, and black beans tossed with a tangy vinaigrette. The varied textures and fresh ingredients combine for a vibrant, refreshing salad with balanced acidity and a touch of heat.

Description

This salad blends fresh vegetables and canned black beans for a hearty, crunchy texture. Cherry tomatoes and cucumbers add juiciness and mildness, while the poblanos and jalapenos introduce varied levels of peppery heat. Red onion brings pungency, and cilantro adds herbal brightness.

The vinaigrette, made from apple cider vinegar, olive oil, honey, salt, and fresh ground black pepper, complements the vegetables with a tangy sweetness and subtle spice, tying together the flavors.

Prepared simply by tossing the salad ingredients with the vinaigrette, it can be served immediately or chilled. It works well as a side dish or light meal during warmer weather.
