Black Bean & Pumpkin Chili

Black Bean & Pumpkin Chili is a hearty stew combining black beans, pumpkin, and turkey or beef simmered with onions, sweet yellow pepper, and spices. The chili balances savory meat with the subtle sweetness of pumpkin and the warmth of chili powder and cumin, creating a rich, warming dish suitable for cooler days and nutritious family meals.

Description

This chili begins by browning turkey or steak pieces, then sautéing onions and sweet yellow bell peppers before combining all ingredients in a slow cooker. Canned black beans, solid-pack pumpkin, diced tomatoes, and a blend of chili powder, oregano, cumin, and parsley create a complex and earthy flavor profile. Chicken broth provides a flavorful cooking liquid, bringing the ingredients together over slow simmering for five hours, allowing the meat to become tender and flavors to meld.

The inclusion of pumpkin adds a smooth texture and mild sweetness that contrasts with the savory beans and meat. This chili is thicker and richer than typical tomato-based chilis, with a unique flavor from the pumpkin. It can be served as a main course, offering protein and fiber, and pairs well with cornbread or rice.

  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 2 cans cans (15-ounces each) black beans rinsed and drained
  • 2 ½ cups turkey cut into 1/2-inch pieces, cubed cooked; or 1 pound round steak
  • 1 (15-ounce) (15-ounce) can pumpkin solid-pack
  • 1 (14.5-ounce) (14.5-ounce) can diced tomatoes undrained
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons chili powder
  • 1 ½ teaspoons oregano dried
  • 1 ½ teaspoons cumin ground
  • ½ teaspoon salt

  1. In a large 12-inch skillet, heat the oil until hot and rippling over medium or medium-high heat. Add the round steak (if using already cooked turkey, proceed to adding the vegetables) and brown the pieces lightly.
  2. Transfer the meat to a 5-quart slow cooker, leaving oil in the skillet. Add the onion and yellow pepper to the skillet and saute until barely tender, 1-2 minutes. Add the garlic and cook one minute longer.
  3. Transfer the mixture to the slow cooker. Stir in the remaining ingredients to the slow cooker. Cover and cook on low for 5 hours.
