  • 1 onion diced, small
  • 1 cup rice Jasmine or long grain
  • 2 cups broth chicken, beef, or veggie
  • 14 oz black beans rinsed and drained, canned
  • 3 tbsp lime juice
  • 3 tbsp cilantro

Instructions

  1. Preheat a heavy bottom pan with oil. Add in diced onions and cook until translucent.
  2. Add in rice and cook until it's lightly browned.
  3. Add broth and beans. Cover with a lid and bring to a boil. Turn down to a simmer, cook for an additional 15 minutes.
  4. Remove from the heat. Add in fresh squeezed lime juice and cilantro. Season to taste and enjoy.
