Description

Ingredients
- 1 tbsp neutral cooking oil olive or avocado, generic cooking oil
- 1 onion diced, small
- 1 cup rice Jasmine or long grain
- 2 cups broth chicken, beef, or veggie
- 14 oz black beans rinsed and drained, canned
- 3 tbsp lime juice
- 3 tbsp cilantro
Instructions
- Preheat a heavy bottom pan with oil. Add in diced onions and cook until translucent.
- Add in rice and cook until it's lightly browned.
- Add broth and beans. Cover with a lid and bring to a boil. Turn down to a simmer, cook for an additional 15 minutes.
- Remove from the heat. Add in fresh squeezed lime juice and cilantro. Season to taste and enjoy.
