  • 1 cup grape tomato halved or quartered, or cherry tomato
  • 1/4 cup red onion finely diced
  • 2 tablespoons cilantro chopped, fresh

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon cumin ground
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper ground
  • 2 cloves garlic finely minced

Instructions

  1. Remove kernals from ear of corn.
  2. Add kernals to bowl with black beans, bell pepper, tomatoes, onion, and cilantro.
  3. In a separate bowl, whisk together dressing ingredients.
  4. Drizzle dressing over salad.
  5. Serve at room temperature or chill until ready to serve.
  6. If chilling, remove from fridge about 30 minutes before serving to take the chill off.
