Super delicious veggie packed black bean salad is one of my favorite lunch or dinners.

Ingredients
- 3 tbsp olive oil
- 2 tablespoons lime juice
- ½ tsp cumin
- 1 tsp salt sea salt
- ¼ tsp black pepper
- 1 black beans drained and rinsed, canned
- 1 bell pepper diced
- ½ onion diced, or red onion
- 1 zucchini quartered and diced, medium
- ½ cup red cabbage shredded
Instructions
- Combine the oil, lime juice, cumin, salt, and pepper in a large bowl.
- Add the beans, bell pepper, onion, zucchini, and red cabbage.
- Toss to combine, taste and adjust seasoning, add more salt if needed.
- Enjoy at room temperature or chilled.
