  • ½ cup corn thawed, frozen
  • 1 ounce diced green chiles canned
  • 2 tomato diced
  • 1 red onion chopped
  • 1 jalapeño finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • tortilla chips for serving

Instructions

  1. Place the beans, corn, chiles, tomatoes, onions, jalapeno peppers and cilantro in a large bowl. Squeeze the lime juice on top, season with cumin, salt and pepper and toss gently to combine.
  2. Enjoy immediately at room temperature, or cover and refrigerate until cool, about 1 hour.
