Black Bean Stuffed Sweet Potatoes

Black Bean Stuffed Sweet Potatoes combine tender baked sweet potatoes with a filling of black beans, fire-roasted tomatoes, corn, and spices. The mixture is brightened with fresh cilantro and lime juice, then spooned into the sweet potatoes and topped with sour cream, guacamole, and extra cilantro. The dish balances sweet, savory, and tangy elements with hearty textures for a satisfying vegetarian meal.

Description

The recipe starts by cooking sweet potatoes until tender, either microwaving or baking until easily pierced with a fork. Meanwhile, a filling is made by heating together fire-roasted tomatoes, black beans, corn, and seasonings like garlic powder, cumin, coriander, and salt. Fresh cilantro and lime juice are stirred in to add brightness and herbaceous flavor.

The warm black bean mixture is spooned into the split sweet potatoes, creating a colorful and nutrient-rich main. Toppings of sour cream, guacamole, and extra cilantro add creamy and fresh contrast. This dish provides a blend of soft and chunky textures as well as a mix of earthy and zesty flavors.
