Black Beans and Rice
Description
Starting with sautéed onion and garlic in vegetable oil, uncooked white rice is toasted briefly before adding chicken broth and canned diced tomatoes with chilies. Simmering the mixture covered allows the rice to absorb the flavorful liquids. Spices such as cumin, turmeric, kosher salt, black pepper, and cayenne pepper are stirred in to build complexity and a hint of heat.
After the rice is cooked through, two cans of drained and rinsed black beans are added and mixed in, contributing protein and a creamy texture. The final dish features tender grains enriched by earthy beans, distinct spices, and savory tomato undertones.
This recipe serves as a hearty, practical dish that can stand alone as a complete meal or be paired with other Latin-inspired dishes. Its straightforward preparation and pantry-friendly ingredients make it accessible to home cooks looking for a satisfying, flavorful rice and legume combination.
