  • 1 baguette sliced
  • olive oil salt, and pepper for crostini
  • 8 oz. burrata cheese
  • salt flakes
  • black pepper freshly ground
  • 6 oz. blackberry large ones halved
  • 1/4 /4 cup mint chopped
  • 1 lemon juiced
  • 2 teaspoons olive oil
  • honey for drizzle

Instructions

  1. Pre-heat oven to 375°F. Lay out baguette slices on a baking sheet. Drizzle with olive oil (don’t drench them, dry areas are ok). Sprinkle with salt and pepper. Flip slices over and repeat. Toast in oven for 10-12 minutes, flipping halfway through. Watch carefully so they don’t burn.
  2. In a small bowl, mix together mint, lemon, olive oil, and a pinch of salt as needed.
  3. Layer the following on top of each crostini: 1-2 Tablespoons burrata, freshly ground black pepper, pinch of salt flakes 3-4 blackberries, drizzle of mint mixture, and a drizzle of honey. Top with additional mint leaves or salt flakes as desired.
