Description
The filling combines blackberries, sugar, and cinnamon cooked until the berries release juice and the mixture boils. A cornstarch and water slurry is added to thicken the filling, which is cooked further to a rich consistency before pouring into a baking dish.
The topping is a biscuit-style dough made from flour, sugar, baking powder, salt, and cold butter cut into coarse crumbs. Cold buttermilk is stirred in just until moistened. Spoonfuls of this dough are dropped over the hot blackberry filling in uneven mounds.

Ingredients
- 24 ounces blackberry
- 1 cup granulated sugar
- ¼ teaspoon cinnamon optional but recommended
- 3 tablespoons cornstarch
- ¾ cup water
Topping
- 1 ½ cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon kosher salt
- ½ cup butter grated or finely cubed, cold
- ⅓ - ½ cup buttermilk cold
Instructions
- In a large saucepan, combine the blackberries, sugar, and cinnamon. Cook and stir until mixture comes to a boil.
- Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.
- Pour into a greased 8" square baking dish.
TOPPING
- Preheat oven to 350°F.
- In a small bowl, combine the flour, sugar, baking powder, and salt. Cut in butter using a pastry blender or two forks until the mixture resembles coarse crumbs.
- Stir in milk just until moistened. Drop by tablespoonfuls onto hot berry mixture.
- Bake, uncovered, for 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream if desired.
Notes
- Adjust buttermilk amount so the biscuit dough is moist but holds together when pinched.
