Description

The crust and crumb topping are made by pulsing flour, sugar, brown sugar, baking powder, salt, cold butter, and egg yolk in a food processor until crumbly dough forms. Half the dough presses into the prepared pan to form an even base. Fresh blackberries tossed with lemon juice, sugar, and cornstarch provide a juicy filling that thickens during baking. The remaining crumb mixture is spread on top to nestle around the berries.

When baked at 375 degrees Fahrenheit, the bars develop a golden crust with a tender interior where the blackberries soften and meld with the crumb layers. The lemon juice adds brightness, balancing the sweetness.

  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar , packed
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup butter unsalted
  • 1 large egg yolk
  • 2 cups blackberry fresh
  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • 1 tablespoons cornstarch

Instructions

  1. Preheat the oven to 375 degrees and spray an 8x8 pan with baking spray.
  2. Add flour, sugar, brown sugar, baking powder, salt, butter and egg to a food processor and pulse until a crumbly dough starts coming together.
  3. Add half the dough to your baking pan and press down in an even layer gently.
  4. In a large bowl mix the blackberries, lemon juice, 1/4 cup sugar and cornstarch.
  5. Pour mixture over the crust.
  6. Crumble the remaining flour mixture over the top of the blackberries.
  7. Bake for 40-45 minutes until golden brown.
