Blackberry Lime Fruit Salad

!Dressing

  • 1/4 cup orange juice
  • 1 teaspoon orange zest
  • lemon juice and zest from one
  • lime juice and zest, large
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon poppy seeds

!Salad

  • 1 (15 ounces) can mandarin orange thoroughly drained
  • 2 cups strawberry hulled and sliced, fresh
  • 3 medium kiwi peeled, halved, and sliced
  • 1 cup grapes seedless
  • 1 cups blueberries
  • 2 large Mango peeled and diced
  • 1 cup blackberry
  • 1 cup raspberry

Instructions

  1. In a medium saucepan add the orange juice, zest, lemon juice and zest, lime juice and zest, and honey to a boil over medium high heat. Reduce the heat for about 5 minutes and let it thickem. Add in the vanilla and poppyseeds. Set aside to cool.
  2. In a large bowl, add in the prepared mandarin oranges, sliced strawberries, sliced kiwis, grapes, blueberries, mangoes, blackberries, and raspberries.
  3. Pour the dressing over the salad and lightly toss the ingredients together.
  4. Return to the fridge to allow to cool and let the flavors meld.
  5. Serve after the salad has been chilled, tossing once more.
