Description

The salmon is seasoned with a blackening spice blend containing paprika, cumin, cayenne pepper, garlic and onion powders, salt, and pepper. After patting dry, the seasoning is pressed onto the flesh side, then the fillets are pan-seared in olive oil or air-fried until the skin crisps and the salmon is cooked through. This method yields a flavorful, slightly spicy crust while maintaining tender interior texture. The mango salsa is prepared by combining diced mango, finely chopped red bell pepper and red onion, chopped cilantro, minced jalapeño for optional heat, fresh lime juice, and salt. Its sweet, citrusy, and mildly spicy notes complement the salmon’s robust flavors. Salmon:

  • 4 salmon fillet 6 oz, skin-on
  • 1 tablespoon paprika
  • 2 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 - 2 tablespoon olive oil

Mango Salsa:

  • 2 Mango peeled and diced, ripe
  • 1 cup red bell pepper seeded and finely chopped
  • cup red onion finely diced
  • ¼ cup cilantro thick stems removed and roughly chopped, fresh
  • 1 jalapeño optional, seeded and minced
  • 1 lime juiced (about 3 tablespoon lime juice, large
  • ¼ teaspoon salt or to taste

Instructions

  1. In a small bowl, combine the paprika, cumin, cayenne pepper, onion powder, garlic powder, salt, and pepper. 
  2. Gently pat the salmon fillets dry with a paper towel. Then place them on a large plate, flesh-side up, and use your fingers to pat the seasoning mixture on each piece of salmon.
  3. PAN-SEAR: In a large skillet, heat olive oil over medium heat. Once heated, place salmon, flesh-side down into the pan. Cook for 2 - 3 minutes, until crisp, and then flip salmon with a spatula and cook for another 5 - 6 minutes until the skin becomes crispy and salmon is desired doneness. 
  4. AIR FRY: Preheat air frier to 380°F, place seasoned salmon fillets skin side down, and air fry for 8 - 10 minutes or until it reaches desired doneness. 
  5. Meanwhile, mix all the mango salsa ingredients together. Taste and adjust seasoning if needed.
  6. Top salmon with fresh mango salsa and serve immediately with a side of roasted vegetables and on a bed of rice and enjoy!

Notes

  • Store cooked salmon in an airtight container for up to 3–4 days; keep mango salsa separate to maintain freshness.
  • Reheat salmon gently on stovetop or in an air fryer at 350°F for a few minutes; avoid microwave reheating to preserve texture.
