Blackened Shrimp

  • 1 pound Shrimp peeled and deveined, large
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

Greek Yogurt Avocado Cilantro Ranch

  • 1 avocado
  • ¼ cup cilantro chopped
  • ¼ cup Greek yogurt
  • 1 garlic clove
  • 3 tablespoons olive oil add more for smoother consistency
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Serving

  • 1 (15.25 ounce) corn drained and rinsed, canned
  • 1 (15.25 ounce) black beans drained and rinsed, canned
  • 2 cups brown rice I used a brown rice quinoa blend, cooked
  • 2 avocado sliced

Instructions

  1. Add 1 pound large shrimp to a large bowl. Add 1 tablespoon chili powder, 2 teaspoons paprika, 1 teaspoon onion powder, 1 teaspoon cumin, ½ teaspoon garlic powder, 1 teaspoon salt, and ¼ teaspoon pepper and mix to combine.
  2. In a medium-sized skillet add 2 tablespoons olive oil and shrimp. Cook over medium-high heat until cooked through.
  3. To make the Greek Yogurt Avocado ranch: In a food processor, add 1 avocado, ¼ cup chopped cilantro, ¼ cup Greek yogurt, 1 garlic clove, 3 tablespoons olive oil ½ teaspoon salt, and ¼ teaspoon pepper. Pulse until smooth. Add a little water if a smoother consistency is desired.
  4. To assemble the bowls, divide the shrimp, 1 (15.25 ounce) can corn, 1 (15.25 ounce) can black beans, 2 cups cooked brown rice, and 2 sliced avocados evenly. If using for meal prep, add the avocado right before eating. Drizzle with dressing.
