Ingredients
Blackened Shrimp
- 1 pound Shrimp peeled and deveined, large
- 1 tablespoon chili powder
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
Greek Yogurt Avocado Cilantro Ranch
- 1 avocado
- ¼ cup cilantro chopped
- ¼ cup Greek yogurt
- 1 garlic clove
- 3 tablespoons olive oil add more for smoother consistency
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Serving
- 1 (15.25 ounce) corn drained and rinsed, canned
- 1 (15.25 ounce) black beans drained and rinsed, canned
- 2 cups brown rice I used a brown rice quinoa blend, cooked
- 2 avocado sliced
Instructions
- Add 1 pound large shrimp to a large bowl. Add 1 tablespoon chili powder, 2 teaspoons paprika, 1 teaspoon onion powder, 1 teaspoon cumin, ½ teaspoon garlic powder, 1 teaspoon salt, and ¼ teaspoon pepper and mix to combine.
- In a medium-sized skillet add 2 tablespoons olive oil and shrimp. Cook over medium-high heat until cooked through.
- To make the Greek Yogurt Avocado ranch: In a food processor, add 1 avocado, ¼ cup chopped cilantro, ¼ cup Greek yogurt, 1 garlic clove, 3 tablespoons olive oil ½ teaspoon salt, and ¼ teaspoon pepper. Pulse until smooth. Add a little water if a smoother consistency is desired.
- To assemble the bowls, divide the shrimp, 1 (15.25 ounce) can corn, 1 (15.25 ounce) can black beans, 2 cups cooked brown rice, and 2 sliced avocados evenly. If using for meal prep, add the avocado right before eating. Drizzle with dressing.
