Blackened Shrimp Po Boys
Description
The Blackened Shrimp Po Boys recipe centers on shrimp seasoned with a blend of smoked paprika, chili powder, brown sugar, cumin, garlic powder, salt, and black pepper. After tossing with olive oil, the seasoned shrimp is sautéed until opaque, producing a slightly charred and aromatic exterior. Served on split-top buns, the shrimp is layered with shredded lettuce and thin tomato slices, adding freshness and crunch. A spicy mayo, made from mayonnaise, Cajun seasoning, and lemon juice, is drizzled over the shrimp to add creaminess and a subtle heat that ties the sandwich components together.
This sandwich works well for lunch or dinner and can be paired with lemon wedges to add an optional bright acidity. The combination of the blackening spice mix and the creamy, lightly tangy mayo defines the sandwich’s flavor character.
For a spicier variation, crushed red pepper flakes can be added to the blackening seasoning, adjusting the heat level to taste. The shrimp cook quickly, so watching for an opaque appearance is key to avoid overcooking and retain juiciness.
