Blanched Green Beans with Asian Sauce

This recipe serves blanched green beans dressed in a vibrant Asian-style sauce made from soy sauce, white wine vinegar, lemon juice, honey, chili, ginger, garlic, and green onion. The quick blanching preserves the beans' crisp texture, while the sauce adds a balance of tangy, sweet, and spicy notes enhanced by toasted sesame.

Description

Green beans are briefly boiled for 2-3 minutes, then shocked in cold water to maintain their bright color and crispness. The sauce is prepared by finely chopping chili and green onion, grating garlic and ginger, then combining these with soy sauce, vinegar, lemon juice, and honey. Toasted sesame seeds add a nutty flavor. After frying crushed garlic briefly in olive oil, the blanched beans are added and coated with the sauce, cooking together for a short time to marry the flavors.

This dish provides a fresh vegetable side with a complex, balanced Asian flavor profile. The method emphasizes preserving green bean texture while layering savory, tangy, and mildly spicy notes. It's suited as a side for various meals or a light appetizer.
