Blanching Peas for Freezing - How To Blanch Peas

  • 1 pound green peas rinsed and drained
  • 1 teaspoon kosher salt
  • water
  • ice

Instructions

  1. Fill a large bowl with ice water and set aside.
  2. Bring 6 cups of water to a boil in a medium saucepan. Add peas and salt and cook until peas are crisp-tender, 1 ½ to 2 minutes.
  3. Using a slotted spoon or a spider strainer, transfer the peas into the ice water. This will stop the cooking process. Let them sit for 3-5 minutes.
  4. Meanwhile line a sheet pan with a kitchen towel.
  5. Drain the peas and spread them evenly onto the baking sheet. Gently move them around to dry. Transfer the sheet pan into the freezer for up to 1 hour. Remove from freezer and transfer the peas into a freezer bag.
  6. Remove as much air as possible and seal it before placing them into the freezer.
