Blistered Shishito Peppers

Blistered Shishito Peppers are pan-cooked with vegetable oil until their skins char and blister, producing a smoky flavor and tender texture. The peppers develop a softened bite with occasional mild heat, enhanced by a light seasoning of salt or other preferred seasonings. This simple preparation highlights the peppers' natural taste in a casual snack or appetizer style.

Description

The recipe calls for heating vegetable oil in a pan over medium-high heat, then briefly cooking the washed and dried shishito peppers covered with a lid to trap moisture and smoke. After they begin to pop and char, the peppers are flipped, covered, and cooked briefly more to achieve even blistering. Resting them on paper towels removes excess oil before seasoning with salt or other flavorings.

The quick cooking softens the peppers while imparting a smoky charring that contrasts with the mild pepper heat. The use of the lid helps retain moisture and enhances flavor absorption. The simple seasoning lets the natural pepper flavor shine, and the dish can be customized with different seasonings to taste.

These blistered shishito peppers serve well as a light snack or appetizer, especially alongside drinks or as a side to a meal. Their easy preparation and distinct taste make them a flavorful addition to various menus.

Ingredients

Servings
  • ½ tbsp vegetable oil
  • 15 shishito pepper washed and dried
  • salt sprinkle, to taste, optional

Instructions

  1. In a medium pan over medium-high heat, add the vegetable oil.
  2. Add in the peppers. Cover with a lid, and cook for 45 seconds to a minute. Wait until it begins to make popping noises and look charred.
  3. Turn the heat off and flip all the ingredients.  Turn the heat back to medium-high and cover with the lid.  Cook for an additional 45 seconds.
  4. Remove from heat, use tongs to place all the peppers on a plate lined with paper towels. Sprinkle with salt, optional.

Notes

  • Ensure peppers are completely dry before adding to hot oil to prevent splattering.
  • Covering the pan helps retain moisture and infuse a smoky flavor into the peppers.
  • Flipping while covered avoids oil splatter and cooks peppers evenly.
  • Simple seasoning with salt highlights their natural flavor; feel free to experiment with other seasonings as desired.
