BLT Corn Salad
Description
BLT Corn Salad features diced bacon cooked until crisp and mixed with freshly cut sweet corn kernels. Baby arugula provides a spicy, leafy contrast, while cherry tomatoes add bursts of juiciness. Chopped fresh basil enhances the salad with herbal notes, and a dressing of canola oil and red wine vinegar brings acidity and smoothness.
The salad combines smoky, crisp bacon with the sweet crunch of corn and the brightness of fresh vegetables and herbs. Tossing the ingredients evenly allows the flavors and textures to mingle, creating a lively but simple dish.
This salad works well as a side to grilled meats or sandwiches, or as a light stand-alone salad. It can be served chilled or at room temperature, making it versatile for picnic or potluck meals.
Ingredients
- 6 Bacon chopped, slices
- 6 ears corn kernels cut from the cob, fresh sweet
- 2 cups arugula baby
- 1 cup cherry tomato halved or quartered
- ¼ cup basil chopped, fresh
- ¼ cup canola oil
- 3 tablespoons red wine vinegar
- ½ teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
Instructions
- Heat a large skillet over medium heat and add the chopped bacon. Cook until the bacon is crisped and the fat is rendered, turning occasionally. Use a slotted spoon to transfer the bacon to a plate lined with a paper towel to drain.
- In a large bowl, toss the corn kernels with the bacon, arugula, cherry tomatoes, and basil. Drizzle with the canola oil and red wine vinegar and season with the salt and pepper. Toss to coat and serve at room temperature or chilled.
