Description
This salad blends crispy bacon pieces with al dente rotini pasta, fresh diced tomatoes, creamy avocado, shredded cheddar cheese, diced red onion, and chopped romaine lettuce. The dressing is made by mixing mayonnaise, ranch dressing, and optionally some reserved bacon grease for additional smoky richness.
After assembling all ingredients in a large bowl, the dressing is poured over and tossed to combine, evenly coating the ingredients. Garnishing with parsley adds a bright note. The salad offers creamy, tangy, crunchy, and savory elements all in one, making it satisfying and versatile for lunch or a picnic side.
The salad can be prepared ahead and chilled. Adding bacon grease to the dressing is optional but enhances the bacon flavor continuity throughout the salad.
Ingredients
- 10 lices Bacon cooked and crumbled, grease reserved
- 12 ounces rotini pasta or penne, cooked and cooled
- ½ cup mayonnaise
- ¾ cup ranch dressing
- 1 ½ cups tomato diced, fresh
- ½ avocado diced
- 1 cup cheddar cheese shredded
- ⅓ cup red onion diced
- 1 cup romaine lettuce chopped
- parsley for garnish, optional, chopped, fresh
Instructions
- Whisk together mayonnaise, ranch dressing and 1 tablespoon bacon grease (optional).
- In a large bowl assemble the pasta, tomatoes, avocado, cheese, red onion, lettuce and bacon.
- Pour the dressing over and toss to combine.
- Garnish with parsley and serve.
