Ingredients
Salad:
- 2 cups rice
- 1/2 lbs Bacon sliced into 10 cm wide pieces
- 1 small lettuce such as Romain Lettuce or Green Leaf, head, thinly sliced
- 1 pint cherry tomato halved
Dressing:
- 1 small avocado ripe
- 1 cup cilantro roughly chopped
- 1/4 cup lime juice from 3-4 limes, fresh
- 1/4 cup olive oil
- 1/2 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp salt
