Description
This Blue Cheese Steak Sauce starts by gently cooking shallots in butter to soften and develop sweetness. Apple cider vinegar adds acidity and brightness, balanced by heavy cream for richness. Crumbled blue cheese is added in two stages—half to melt into the simmering cream mixture, thickening the sauce, and the remainder stirred in off heat to retain some texture.
Worcestershire sauce and garlic powder add depth, while fresh chopped chives contribute a mild oniony freshness. The sauce is seasoned with salt and black pepper to taste.
When served warm immediately, the sauce coats steak or other proteins with a creamy, savory layer that enhances the meat’s flavor. It pairs well with steak and potatoes or chicken with garlic herb butter.
For greater flavor, sear steak first in the pan and use the fond to start the sauce. To thicken the sauce further, simmer gently until reduced, or add milk or lemon juice to lighten the consistency as desired.
Ingredients
- 1 tbsp butter
- 1 shallot finely chopped, banana variety
- salt to taste
- 4 tbsp apple cider vinegar
- ½ cup heavy cream
- 6 oz blue cheese crumbled and divided
- 1 tsp Worcestershire sauce
- ½ tsp garlic powder
- black pepper to taste
- 1 tbsp chives chopped
Instructions
- Melt the butter in a medium saucepan over a medium heat. Add the shallot with a pinch of salt and gently cook for about 5 minutes until soft and just starting to color.
- Splash in the apple cider vinegar and allow to bubble for one minute before stirring in the heavy cream, half the blue cheese, Worcestershire sauce and garlic powder. Once the mixture is bubbling, allow to cook for 5 minutes so that the cheese melts and the sauce thickens.
- Remove from the heat and stir in the remaining blue cheese and the chives. Season to taste with salt and pepper, and serve immediately.
Notes
- Sear your steak in the same pan first to incorporate the flavorful browned bits into the sauce.
- Simmer the sauce gently while stirring to thicken it to your preferred consistency.
- If the sauce becomes too thick, thin it with a splash of milk or a bit of lemon juice for brightness.
