  • 1 ½ cups rolled oats
  • ½ cup milk
  • 1/3 cup brown sugar
  • ¼ cup butter melted
  • 2 large egg beaten
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¾ teaspoon salt
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray.
  2. Add all of the ingredients except for the blueberries to a mixing bowl and stir well to combine.
  3. Fold in the blueberries gently so as not to break them up too much.
  4. Spread mixture into the prepared baking dish and bake for 30 minutes or until a knife comes out mostly clean with just a few moist crumbs.
  5. Spoon into bowls and serve with additional blueberries and a drizzle of cream or syrup, if desired.

Notes

  • Fresh or frozen blueberries can be used; frozen berries may add extra moisture.
  • Substitute blackberries or raspberries for a different berry flavor.
  • Serve with cream, syrup, or additional fresh berries as desired.
