  • baking powder
  • ground cinnamon 1 teaspoon
  • salt
  • brown sugar ¼ cup packed, optional, for added sweetness
  • milk 1 ½ cups, dairy or non-dairy
  • egg 2 large
  • coconut oil ¼ cup melted, or butter
  • vanilla extract
  • blueberries 1 cup, fresh or frozen
  • nuts ½ cup chopped, optional
  • maple syrup ¼ cup, optional, for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish or an 8x11-inch baking dish.
  2. In a large bowl, mix the rolled oats, baking powder, ground cinnamon, salt, and brown sugar (if using).
  3. In a separate bowl, whisk together the milk, eggs, melted coconut oil or butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Gently fold in the blueberries and chopped nuts (if using).
  6. Pour the mixture into the greased baking dish and spread it out evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the oatmeal is set.
  8. Remove from the oven and let cool slightly before serving. Drizzle with maple syrup if desired.
