Blueberry Balsamic Glazed Salmon

This Blueberry Balsamic Glazed Salmon recipe features fresh blueberries cooked down with balsamic vinegar, sugar, lemon juice, and thyme to create a tangy-sweet glaze. Broiled salmon filets are brushed with this sauce twice, resulting in a caramelized, flavorful crust while keeping the salmon moist and tender inside. The glaze adds a fruity brightness balanced with acidity and herbal hints from thyme, enhancing the natural flavor of the fish.

Description

Blueberry Balsamic Glazed Salmon combines fresh blueberries and balsamic vinegar cooked into a syrupy glaze alongside sugar, lemon juice, and sprigs of thyme. The sauce's sweetness contrasts the balsamic's acidity, while thyme imparts a subtle herbal depth. The salmon filets are seasoned simply with salt and pepper then broiled, with the glaze brushed on before and midway through cooking. This technique results in a lightly caramelized coating that complements the fish's rich texture.

The salmon is cooked skin-side down under a high broiler, allowing the glaze to set and intensify in flavor without overcooking the fish. The finished fillets flake easily but retain moisture, and the blueberry glaze adds a fruity tang and shine to the presentation. This dish pairs well with simple sides that won't compete with the glaze's sweet and acidic notes.

Ingredients

Servings
  • ½ cup blueberries fresh
  • 5-6 thyme fresh, sprigs
  • 1 tbsp. granulated sugar
  • 1 tbsp. balsamic vinegar
  • 2 tsp. lemon juice
  • ½ tsp. salt divided
  • 4 (4-5 oz.) salmon filets
  • ¼ tsp. black pepper ground

Instructions

  1. In a small sauce pot, add the blueberries, thyme, sugar, balsamic vinegar, lemon juice, and ¼ teaspoon of salt. Place over medium heat. Boil for 15 minutes, stirring occasionally. The blueberries will release their juices. The sauce will reduce and thicken.
  2. In the meantime, place an oven rack 6 inches from the broiler. Preheat oven broiler to high. Optional: Line a baking sheet with aluminum foil.
  3. Pat salmon filets dry with paper towels. Sprinkle both sides of the fish with a pinch of salt and pepper.
  4. Place the fish skin side down on the baking sheet.
  5. Brush a thin layer of the blueberry glaze onto the salmon. Place the fish under the broiler for three minutes. Brush an additional thin layer of glaze on the fish. Place back under the broiler for an additional 3-5 minutes. Once cooked, the salmon should flake when pressed with a fork, but not be dry.
