  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 egg large
  • 1 c. granulated sugar
  • ½ c. vegetable oil
  • 2 Tbsp milk whole
  • 1 tsp lemon juice
  • ½ tsp vanilla extract
  • 3 banana mashed, ripe
  • c. blueberries fresh
  • sugar optional topping, coarse

Instructions

  1. Preheat the oven to 325 degrees F and grease a 9x5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a separate large bowl, beat together the egg, sugar, and vegetable oil.
  4. Add the dry ingredients to the egg mixture and mix just until combined
  5. Then add the milk, lemon, juice, vanilla extract, and bananas until fully incorporated.
  6. Fold in blueberries and transfer the batter to the prepared pan.
  7. Top with coarse sugar, if desired.
  8. Bake for 60 to 65 minutes, until a toothpick inserted into the center comes out clean.
  9. Cool on a wire rack and remove from the pan.

Notes

  • Adding up to ½ cup walnuts can provide extra texture.
  • When using an 8x4-inch pan, increase baking time slightly.
