  • 1 cup flour
  • 3 tablespoons sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. In a large mixing bowl, mix together flour, sugar, baking soda, and salt.
  2. In a separate bowl, whisk together the egg, buttermilk, and vanilla.
  3. Add the wet ingredients to the dry ingredients and stir until combined.
  4. Heat a griddle to medium heat and spray with cooking spray. Pour 1/4 cup of pancake mixture onto the griddle. Sprinkle blueberries on top.
  5. Once the sides start to dry and the top is bubbling, flip the pancake using a large spatula. Cook until both sides of the pancake are golden brown and the middle is cooked through (you can check by inserting a toothpick into the middle of the pancake - if it comes out dry it is done).
  6. Remove from heat and serve with your favorite pancake topping.
