Blueberry Chia Pudding
Description
This recipe begins with cooking fresh or frozen blueberries into a compote by simmering them on medium heat until they break down. After cooling, the compote is folded into a mix of chia seeds soaked in milk, sweetened with maple syrup and flavored with vanilla. The combined mixture is chilled to allow the chia to swell and create a thick, spoonable pudding consistency. Stirring the pudding before and during chilling helps distribute the compote evenly and prevents clumps.
The finished pudding has a creamy texture from the milk and smoothness from the blended chia seeds, contrasted by the slight tartness and berry flavor of the blueberry compote. It can be served plain or garnished with toppings like yogurt, fresh fruit, nuts, or seeds for added variety. The recipe provides an appealing way to combine the natural benefits of chia seeds with a fresh fruit element.
